KITCHEN HOOD EXTINGUISHING SYSTEMS

 

It has been developed to protect businesses against fires that occur in industrial or large kitchens under today’s conditions. The basic principle is to realize maximum protection by using minimum extinguishing agent. Special nozzles have been developed for this purpose. The wet chemical substance used is easy to clean and prevents re-ignition. Due to the easy cleaning of the liquid extinguishing agent used, production can be returned to production very quickly. Kitchen Hood Extinguishing System is offered as a package with cylinders, Potassium-based Wet Chemical extinguishing agent, activation elements, pipes and discharge nozzles.

Kitchen hood extinguishing systems are pre-engineered package systems and system selection and installation cannot be made without accurate field exploration. The Hood Extinguishing System design of the detailed exploration area is based on NFPA 17 standards. The basic requirements in the design are below;

  • The system shall be activated automatically by means of fusible links in the hood or by a manual pull station to be placed in the escape route
  • The system must be mechanically or electrically suitable to shut off the gas line used in the cookers by a valve
  • The system should be able to send signals to the central fire detection and notification system
  • The system to be installed must be capable of suppressing the fire in the following areas
  1. Vents
  2. Hoods
  3. Filters
  4. Cookstoves
  5. Fryers
  6. Lamb cookers
  7. Grills
  8. Other cooking appliances
  • An independent system should be implemented for each appliance group and hood where there is a risk.
  • Each system is a whole in itself and all featured elements must be the product of the same manufacturer. The system is a whole with all its components and cannot be replaced by another component or a substitute element.

How to Design an Amerex KP Hood Extinguishing System?

The system design is made in accordance with the calculation methods specified by the manufacturer and within the limited quantities.

Basically, the nozzles that will perform the protection process are determined by taking into account the size and form of the chimney, the filter type, size and position, and the dimensions of the cooking elements such as single cooker, double cooker, quad cooker, fryer, grill, grill, tilting pan under the hood, which determine the capacity of the Hood Extinguishing System. Amerex has developed special nozzles for each equipment. Each developed nozzle has a flow coefficient. When determining the system size, all flow coefficients are summed for the designed hood and a standard cylinder is selected to stay at the safe point over the value found.

Amerex Kitchen Hood Extinguishing System is installed using cylinders with 5 different capacities. When 18 flow points are exceeded, multiple cylinders are used.

Amerex KP Zone Defense Kitchen Hood Extinguishing System

AMEREX also offers the “KP Zone Defense” Hood Extinguishing System, which aims at regional protection as an alternative to the standard Kitchen Hood Extinguishing System. In this system, a single type of nozzle is used and it is installed at specified intervals regardless of the cooking units located under the hood. The basic requirement is to provide uninterrupted protection. However, the relatively calculated flow coefficient is high and may require a cylinder with a larger capacity.

It can be used safely in the areas mentioned above. For hoods in kitchen areas, extinguishing is carried out with a special extinguishing liquid with low PH value. The extinguishing chemical is Aqueous Potassium Carbonate and can be easily cleaned after extinguishing.
